Muroka Nama Genshu is considered the purest form of sake. This sake skips charcoal filtration, pasteurization, and dilution. Bold cantaloupe notes and hint of marzipan. A great match for toro and wagyu!
Born is known for “cold maturing” and exclusively brewing Junmai Daiginjo. All of their sake is aged at least one year between 14 and 32 degrees fahrenheit. Sometimes when sake is freshly pressed the flavor profile is subdued and tight. Cold maturing adds depth and character to the flavor profile without altering the initial characteristics that are already present.
