Fun fact: Niwa no Uguisu means “Garden’s Nightengale”. The very first generation of brewers (now in it’s 11th generation) loved watching the nightengales sing in the birdbaths in the garden while drinking sake during the spring. The brewery’s motto for their sake is: food comes first, sake comes second. When asked what makes Niwa no Uguisu so special, the kuramoto (brewery president) answers: “I can list three things that differentiate us from other breweries: rice, water, and people”.
