“Taru” means “cedar barrel”, and that is exactly what this sake is: cedar-barrel aged sake! Smokey, woodey, spicey notes of cedar are complimented with honey, vanilla, and yellow apple. Enjoy at any temperature but highly recommended hot in a cedar masu cup!!!!!
Before the aged of stainless steel tanks and glass bottles, sake was stored and sold in cedar barrels to retailers and restaurant owners. The only flaw with this packaging method was that they would add water to the barrels to boost profit and ultimately jeopardize the integrity of the sake. Thus, sake was eventually sold in “isshobin” bottles (1.8L), followed by “yongobin” (720ml), 300ml, and ichigo (180ml “one” cups).
Kikumasamune employs a staff of 6 people to make their very own cedar barrels on site at the brewery! Check out how its made and visit the factory in Hyogo next time you are in Japan!!!!! https://youtu.be/N9UzMEonBcs
